Easy Christmas Mince Pies
This super simple recipe uses a shop bought jar of mincemeat but with added fresh ingredients to make it taste extra special. Well, it is Christmas!
Ingredients
For the dairy free pasty
200g Plain Flour
Pinch of Salt
2 eggs (one for the pastry, one for glazing)
3½ tbsp cold Water
For the filling
1 jar of shop bought mincemeat
1 apple, cored and diced into small cubes
2 clementines, zested and then segmented
Zest of a lemon
A little caster sugar
Method
Preheat the oven to 190C - 200C. Grease and flour and a 12 hole shallow baking tin so your pasty doesn’t stick.
To make the pastry beat together the rapeseed oil, water, and egg. Add the flour and salt to the wet ingredients until it forms a soft dough. No need to rest this pastry in the fridge. Result!
Roll out on a floured surface and use a round cutter to fit in the holes in the tin. Use the pastry scraps to make Christmas shapes to top your pies.
Mix the mincemeat with the clementine segment pieces, zest and apples and place 1½ tsps of filling into each pastry round. Top with a festive shape. Brush the pastry tops with a little beaten egg and a sprinkling of caster sugar and bake for around 15 minutes.
