Chocolate & Banana Cupcakes
These delicious muffins are so moist because they are made with our extra virgin british rapeseed oil.
Makes 12
Ingredients
100g self-raising flour
20g cocoa powder
115g caster sugar
2 free range eggs
95ml milk
70g milk chocolate chunks or chips
1 ripe banana
Method
Pre-heat your oven to 180C.
Measure out the flour, cocoa powder, sugar, eggs milk and oil and put into a large mixing bowl and stir together until you have a smooth batter.
Add in 50g of the chocolate chips and stir through.
In a smaller bowl use a fork to mash your banana, then add into your batter and stir in.
Put 12 bun cases into a bun tray and spoon in the mixture so all the cases are 3/4 full. Then sprinkle over the last 20g of chocolate chips.
Place the buns in the oven and bake for 15-20 mins until cooked through. Once removed from the oven allow to cool on a wire rack. Enjoy!
