Snap crackle and crunch chicken goujon

Kids and grown ups alike will love these homemade chicken goujons. The crumb, made from puffed rice cereal, makes a deliciously different crispy coating that we guarantee you will love.

Serves 3

Ingredients

  • 3 chicken breasts – cut into strips

  • 100g plain flour

  • 1 medium free range egg (beaten)

  • 150g puffed rice cereal (slightly crushed up)

  • 50ml littleseed extra virgin British rapeseed oil

  • Salt & pepper to season

  • A pinch of smoky paprika

Method

  1. Season the flour with salt and pepper as well as a pinch of smoky paprika if you wish.

  2. Lay out your flour in one bowl, the beaten egg in another and the crushed up puffed rice in another bowl.

  3. First coat your chicken breast strips in flour, then the beaten egg, then roll in the crushed puffed rice.

  4. Add 50ml of littleseed original Rapeseed oil to a large frying pan and heat up.

  5. Add the strips of chicken to the pan, once the oil is heated one at a time, being careful not to knock off the coating.

  6. Shallow fry the chicken strips until golden brown and fully cooked inside.

  7. If you prefer you can oven bake with the littleseed oil drizzled on top of the chicken strips.

  8. Once cooked, get dipping in your favourite sauce and enjoy!
