Cheesy Garlic and Herb sharing flatbread

Garlic, herb and cheese flatbread made with littleseed rapeseed oil

This tear and share garlic bread is perfect for feeding friends and family. Serve it up with a big pan of pasta and fresh salad. A perfect family feast.

Ingredients

  • littleseed Garlic & Herb Oil

  • 180g natural Greek yoghurt

  • 180g self raising flour

  • 1tsp baking powder

  • A pinch of salt

  • A handful of semolina flour

  • A handful of grated mozzarella

Method

  1. Place the yoghurt, flour, 2 tsps Garlic & Herb Oil, salt and baking powder in large bowl.

  2. Using a wooden spoon mix the ingredients together to form a ball of dough.

  3. Sprinkle the semolina flour on a clean work surface and knead the dough for a couple of minutes then using a rolling pin roll it out into a round shape about 5mm thick (it should resemble a 12 inch pizza base).

  4. Put a large frying pan on a high heat and lay the rolled-out dough flat in the pan.

  5. Leave it to cook for 2 minutes and then lift up the dough to check if the under-side is browned. If it is still pale and doughy, cook for a minutes longer and then check again.

  6. When the underside is golden brown, flip the dough over in the pan.

  7. While the other side is cooking drizzle a tablespoon full of Garlic and Herb oil on the cooked side of the flatbread and brush it all over.

  8. Once the other side of the flatbread is golden brown, flip it over and brush it with garlic & herb oil.

  9. Put the flat bread on a baking tray and sprinkle on the mozzarella.

  10. Place it under a hot grill until the cheese is melted and bubbling.

  11. Cut into slices and serve with your favourite pasta dish or as part of a mezze platter.
