Spicy corned beef hash brunch
This classic corned beef hash with a spicy twist from our pizza drizzle oil is delicious served for brunch, lunch or dinner.

Ingredients
2 tablespoons littleseed Pizza Drizzle Oil
2 tablespoons littleseed Extra Virgin British Rapeseed Oil
4 large potatoes
340g Tin of corned beef
1 large Red Onion
1 Red pepper
4 Large free range eggs
Salt and pepper
Fresh Parsley to garnish (optional)
Method
Preheat the oven to 200C / Fan 180C / Gas Mark 6.
Chop the potatoes into cubes and the peppers and onions into medium sized chunks.
Place them all in a roasting tin and drizzle over the Pizza drizzle oil. Season with salt and pepper. Place in the oven to roast for 30 minutes.
Chop the corned beef into chunks. Add 1 tbsp oil to a frying pan and then fry the corned beef for a few minutes to heat through.
Next add the remaining oil to a frying pan and fry the four eggs.
Plate up by layering the potatoes, peppers and onions, then the warmed corned beef then finally top with a fried egg. Garnish with some chopped parsley (optional).

Our pizza drizzle oil brings plenty of chilli heat but if you like it even spicier this dish is great with a drizzle of chilli sauce.
