Spicy corned beef hash brunch

This classic corned beef hash with a spicy twist from our pizza drizzle oil is delicious served for brunch, lunch or dinner.

Ingredients

  • Fresh Parsley to garnish (optional)

Method

  1. Preheat the oven to 200C / Fan 180C / Gas Mark 6.

  2. Chop the potatoes into cubes and the peppers and onions into medium sized chunks.

  3. Place them all in a roasting tin and drizzle over the Pizza drizzle oil. Season with salt and pepper. Place in the oven to roast for 30 minutes.

  4. Chop the corned beef into chunks. Add 1 tbsp oil to a frying pan and then fry the corned beef for a few minutes to heat through.

  5. Next add the remaining oil to a frying pan and fry the four eggs.

  6. Plate up by layering the potatoes, peppers and onions, then the warmed corned beef then finally top with a fried egg. Garnish with some chopped parsley (optional).

Recipe Notes

Our pizza drizzle oil brings plenty of chilli heat but if you like it even spicier this dish is great with a drizzle of chilli sauce.
