Bramble, Yoghurt & Quinola Layered Breakfast Bars

Yoghurt bar made with rapeseed oil and quinoa

These yummy breakfast bars are great to prep ahead when you have busy week and need to grab breakfast on the go. They make a great snack to top up your energy too, at any time of day!

Makes 10

Ingredients

  • 210g Plain Flour

  • 200g Quinola Organic Quinoa

  • 100g Rolled Oats

  • ½ tsp Baking Powder

  • 150ml littleseed Extra Virgin Rapeseed Oil

  • 3 tbsp Honey

  • 1 tsp Vanilla Extract

  • 500g Greek Yoghurt

  • 60g Sugar

  • 2 tbsp Corn flour

  • 150g Blackberries

Method

  1. Pre heat oven at 180 degrees.

  2. First in a mixing bowl combine flour, oats, baking powder, vanilla extract, Rapeseed Oil, honey and Quinola, then mix with a spatula.

  3. Line a 20cm squared baking tray with baking parchment, then spoon out the Quinola mix into the tray.

  4. Next combine the yogurt and sugar and spoon evenly over the Quinola mix.

  5. Top the yoghurt mix with the blackberries, then bake in the oven for 40mins.

  6. Once cooked, allow to cool, then place in the fridge to cool until fully set (usually a couple of hours).

  7. Cut into ten bar sized pieces and enjoy!
