Child Friendly Shredded Chicken with Quinola Thai Quinoa

Thai Quinoa and Chicken salad made with littleseed spicy stir fry oil

Delicious, quick, easy and tasty. What’s not to love about this south east asian inspired chicken dish.

Serves 1

Ingredients

  • 1 small chicken breast

  • 2 tbsp Fish Sauce

  • 1 tbsp Soy Sauce

  • 2 tbsp Spicy Stir Fry Rapeseed Oil

  • 1 packet of Quinola Thai Quinoa

  • Small bunch of fresh Coriander

  • Wedge of fresh lime.



Method

  1. Heat the oven to 180 degrees.

  2. Start by drizzling the chicken breast with the Spicy Fry Oil, then wrapping in tin foil and roasting in the oven for 25 mins or until cooked through.  

  3. Once the chicken breast is cooked, shred with two forks and drizzle with the soy and fish sauce.

  4. Pop the Thai Quinoa in the microwave as per the packet instructions, and once cooked serve in a bowl, topped with the shredded chicken breast, a sprinkle of fresh coriander and a squeeze of fresh lime juice.
