Pork & Pumpkin Traybake

Pork and pumpkin traybake made with littleseed rapeseed oil

We love a one pot dish. It’s easy and it saves on the washing up. This recipe is a great way way to use up halloween pumpkins after the festivities.

Serves 4

Ingredients

  • 4 British pork steaks

  • 500g pumpkin, peeled and cut into wedges

  • 1 large red onion, peeled and chopped into large slices

  • ½ bulb of fennel, chopped into large slices

  • 50ml of littleseed Garlic & Herb Oil, OR our extra virgin British rapeseed oil mixed with ½ tsp dried mixed herbs and a large crushed clove of garlic

  • 1 tsp runny honey

Method

  1. Preheat the oven to 180C and in a roasting dish place the pork steaks on top of pumpkin wedges, red onion and fennel.

  2. Mix the dressing of oil and honey and drizzle evenly over the traybake.

  3. Season with salt and pepper.

  4. Roast for 40 - 50 minutes until the pork is cooked, and serve
