Apple & Cinnamon Muffins
If there’s an easy bake that screams autumn it has to be these Apple & Cinnamon muffins. Light fluffy, sweet and golden. What’s not to love!
Makes 12
Ingredients
55ml milk
175g self raising flour
175g caster sugar
3 large free range eggs
1 tsp ground cinnamon
2 apples, peeled, cored and cut into small chunks
Method
Heat the oven to 200C / Fan 180C / Gas Mark 6.
Put non-stick muffin cases into a muffin baking tray.
Put all the ingredients except for the apple chunks into a large mixing bowl and beat them together to make a golden batter. Stir in the apple chunks, then put the mixture into the muffin cases.
Bake for approx 25 minutes until golden. Remove from the oven and take out of the muffin tray to cool.

Recipe Notes
For a dairy-free option, omit the milk and use 175ml of Littleseed Rapeseed Oil
Too many muffins to eat all at once. Just bag the baked muffins into small batches and freeze. When you fancy a sweet treat, just defrost at room temperature for an hour or so.
