Festive Grilled Cheese

Ham, cranberry and grilled cheese sandwich fried in rapeseed oil

Our favourite way to use up those Christmas leftovers. A deliciously indulgent festive toastie.

Serves 2

Ingredients

  • 2 tbsp littleseed extra virgin British rapeseed oil

  • 4 thick slices of white bread

  • 90g of grated cheese (we used a mixture of cheddar and mozzarella for extra melt)

  • ½  small red onion – diced finely

  • A dessert spoonful of mayonnaise

  • 2 thick slices of cooked ham

  • ½ red onion – diced finely

  • A heaped dessert spoonful of cranberry sauce

Method

  1. Add the grated cheese, diced onion and mayonnaise to a bowl and then mix with a metal spoon to combine.

  2. Split the mixture into four and spread a layer across all four slices of the bread. Add a slice of ham to two of the slices of bread and then top the ham with cranberry sauce. It’s important to put the cheese mixture on all four slices, as this is the glue that holds the sandwich together.

  3. Place the remaining two slices of bread (the ones which are only spread with the cheese mixture) on top of the slices with cheese, ham and cranberry to make two sandwiches.

  4. Meanwhile put a heavy bottomed frying pan over a medium heat on the hob.

  5. Put the littleseed rapeseed oil in a small bowl and then using a pastry brush, brush the tops of the sandwiches lightly with oil.

  6. Place the sandwiches oil side down into the hot pan. After about two minutes brush some oil on to the side of the sandwich that is facing upwards in the pan, then flip the sandwiches over in the pan.

  7. You can now press the sandwiches down firmly using the back of a fish slice or even the weight of another heavy pan on top of the sandwiches.

  8. Keep turning the sandwiches every minute or so until each side is a deep golden brown colour and you can see the cheese oozing.

  9. Transfer the sandwiches to a chopping board, slice each sandwich in half and serve.
