Oat and Coconut biscuits
These oaty, coconut biscuits remind us of the ones served up by our school dinner ladies at morning breaktime. If you fancy a little bit of school day nostalgia then give this recipe a try.
Ingredients
85g oats
60g desiccated coconut
130g plain flour
200g granulated sugar
1.5 tsp bicarbonate of soda
1 tbsp golden syrup
4 tbsp hot water
Method
Preheat the oven to 180C /Gas mark 4.
Line a couple of baking trays with baking parchment.
Combine dry ingredients in a bowl.
Mix the syrup, oil and water together in a jug and then add to dry ingredients. Mix together until all the liquid is combined into the dry ingredients.
Roll the mixture into balls and then space them out across the lined baking trays, leaving room for the biscuits to spread.
Bake in the oven for 10 -15 minutes until golden brown.
The biscuits will still be soft when they come out of the oven but leave them to cool on the tray and they will ready to transfer to a cooling rack after a few minutes.
Enjoy with a cup of tea.
