Spiced Christmas Biscuits

This recipe makes a batch of very delicious but crunchy spiced biscuits. They may seem hard to some, but they will keep for a very long time and you can even thread a ribbon through them and hang on your Christmas tree.

Ingredients

  • 80ml littleseed extra virgin British rapeseed oil

  • 70g Golden Syrup

  • 1 tbsp of Dark Muscavado Sugar

  • 70g Soft Light Brown Sugar

  • ¼ tsp Mixed Spice

  • ¼ tsp cinnamon

  • ¼ tsp ground ginger

  • 1 tbsp water

  • ¼ tsp Bicarbonate of Soda

  • ¼ tsp Baking Powder

  • 225g Plain Flour

Equipment

  • You will also need some cookie cutters, ideally in festive shapes.

Method

  1. Pre heat the oven to 180 or Gas Mark 4.

  2. Line a large baking tray with baking parchment.

  3. Place the oil, golden syrup, sugars, spices and water into a large heavy based saucepan. Stir over a medium heat until all the ingredients are combined. When it starts to bubble slightly, remove it from the hob and let it cool a little. Add in the bicarbonate and baking powder and stir together.

  4. Put the flour in a mixing bowl and add the sugar and oil mixture from the pan. Combine them together into a ball of smooth paste/dough. Put it to one side to cool down completely.

  5. Once the dough is cooled, dust the worktop lightly with flour and using a rolling pin, roll it out to 5mm thick.

  6. Using your cookie cutters keep cutting shapes out of the dough until there is none left.

    Top tip: If you wish to make your biscuits into edible tree decorations you will need to cut a hole out at the top of each biscuit at this stage. Using something like a chopstick or a straw to make the hole. Make sure the hole is twice as big as you need as it will shrink again during baking.

  7. Transfer the biscuits to the lined baking tray and bake in the oven for 20 minutes.

  8. ·Remove from the oven and leave to cool on a wire rack.

  9. If you have added holes to make tree decorations, thread a ribbon through the holes and hang up on your tree.
