Mince pie parcels
These mince pie parcels are a yummy twist on a Christmas classic.
Makes 8
Ingredients
For the pastry
200g Plain Flour
Pinch of Salt
2 eggs (one for the pastry, one for glazing)
3½ tbsp cold Water
For the filling
Jar of mincemeat
Cooking apple, peeled and diced
Clementine, peeled, segmented and chopped
Icing sugar for dusting
Method
To make the pastry beat together the rapeseed oil, water, and egg. Add the flour and salt to the wet ingredients until it forms a soft dough.
Roll out on a floured surface to 3mm thick. Using a knife slice into an even number of 3x3 inch squares.
Preheat oven to 200C/Gas Mark 6.
Add two heaped tsps of mincemeat to the centre of half the squares. Then on top of the mincemeat sprinkle on a few pieces of apple and clementine.
Place one of the remaining pastry squares on top of the filled pastry square, then using a fork crimp the edges of all four sides until they are sealed.
Use a sharp knife to cut a slit in the top of each parcel.
Transfer to a lined baking tray and bake in the oven for 15 minutes.
Remove from the oven and set aside to cool.
Dust with icing sugar and enjoy.
