Perfectly Fluffy American Style Pancakes
Nothing brightens up a day like having pancakes for breakfast. Enjoy them with your favourite toppings. From fresh fruit and cream to maple syrup coated crispy bacon.
Makes 12- 14 pancakes
Ingredients
300g self raising flour
1 tsp baking powder
1 tbsp golden caster sugar
2 eggs
300ml milk
1 tbsp of littleseed extra virgin British rapeseed oil (and a little extra for the pan)
Pinch of salt
Method
Put the flour, baking powder, sugar, egg, milk and oil in a large jug and mix thoroughly with a hand blitzer until you have a smooth, creamy batter. Leave to stand for 10 minutes (if you can wait that long!).
Place a non stick crepe pan or frying pan (lightly greased with a little oil), and when the pan is hot, pour in enough batter for one pancake, tilting the pan quickly to spread the mixture out and evenly cover the base if you are going for a flat traditional pancake. If going for a fluffy, American style pancake then keep the mixture in a smaller round and use a little more for a thicker pancake.
Cook on a high heat for few moments until the underside is lightly browned, and then carefully turn the pancake, or toss it if you think you're clever enough! Cook the other side and then repeat for the remainder of the pancakes.
Serve and top with your favourite toppings.
