Cowboy (Baked beans & Sausage) pie
If you went to school in the UK, there’s a high chance you remember this dish being served up at lunchtime by dinner ladies in nylon tabards. Our version of “Cowboy Pie” is made with homemade baked beans rather than the tinned variety, but we reckon it still gives the same taste of school days nostalgia.
Ingredients
12 pork chipolata sausages
6 medium white potatoes
A splash of milk
50g Cheddar cheese
Homemade baked beans
1 white onion
2 tsp Smoked Paprika
2 x 400g tins of cannellini beans
1 tbsp Worcestershire Sauce
500g Passata
1 tbsp tomato puree
Method
Preheat the oven to 200C/Gas mark 6.
Peel and finely dice the onion using a knife.
Put a casserole dish (cast iron pans are ideal for this as they can be used on a hob and in the oven) over a medium heat and add a generous drizzle of garlic & herb oil. Add the onion and cook until the onion starts to soften.
Add the smoked paprika to the onion and stir in, then add the two tins of beans to the pan including the liquid from the tins.
Add the tomato puree, Worcestershire sauce and passata and stir until combined.
Peel and chop the potatoes in half then add them to a pan of salted water. Bring to the boil and leave to simmer for 15 minutes until soft.
Place the chipolatas in a roasting tin and drizzle on a tablespoon of Garlic & herb Oil and place in the oven for 20 minutes.
Season the beans with salt and pepper. Turn the heat down to low and leave the beans to simmer for 20 minutes.
While the sausages and beans finish cooking, drain the cooked potatoes and place back in the pan ready for mashing.
Add a splash of milk and a tablespoon full of garlic & herb oil to the potatoes then using a potato masher, mash them until smooth and creamy.
Remove the cooked sausages from the oven and then add them to the pan of homemade baked beans and stir so the sausages are covered by the beans.
Remove the pan of beans and sausages from the hob and top with the mashed potato using the back of a spoon to spread it out the edges. Use a fork to rough up the surface of the mashed potato.
Sprinkle on the cheese and then return to the oven for 20 minutes until the top of the pie is golden brown.
