Layered Custard Crumble
This showstopper of a dessert is a delicious twist on one of our favourite puds, Apple Crumble & Custard. Instead of pouring the custard on, it’s baked as a layer of the crumble. Three layers of heaven!
Ingredients
Custard mix
4 Eggs
60g Caster Sugar
215ml Whole Milk
215ml Double Cream
1 tsp Nutmeg
1 tsp Vanilla
Crumble mix
100g Porridge Oats
175g Plain Flour
150g Caster sugar
Apples
1kg Cooking Apples
2tbs Honey
1 tsp Cinnamon
Method
Heat the oven to 160°C/350°F/Gas mark 3.
In a mixing bowl, mix together the ingredients for the custard base, pour the mixture into an oven proof dish and bake for 15 mins or until it’s firm with a wobble.
Meanwhile peel and chop up the apples into slices, drizzle with honey and sprinkle with cinnamon, then bake in the oven for 15 mins or until slightly softer.
Mix all the ingredients for the crumble together, using your hands to gently rub together the mixture to form a crumb texture.
Gently layer the cooked apple slices on top of the custard base, then finish by evenly sprinkling the crumble mixture on top of the apples.
Bake in the oven for a further 15-20 mins or until the crumble topping is slightly golden and crisp. Enjoy!

If you make too much crumble mixture just pop it into a freezer bag and freeze to use it another time.
