Spicy Broccoli Ramen

Ingredients
A whole head of broccoli
1 tbsp sesame seeds
A sachet of miso soup paste
3 tbsp soy sauce
1 lime
1 packet of ramen noodles
2 or 3 spring onions
1 red chilli
2 eggs
Method
Preheat the oven to 200C.
Break up your head of broccoli into florets and place them in a roasting tin.
Drizzle a generous glug of spicy stir fry oil over the broccoli florets, sprinkle on the sesame seeds and put into the oven to roast for 25 minutes.
While the broccoli is roasting bring a saucepan of water to boil. Gently place the eggs in the boiling water and set a timer for 6 minutes 30 seconds.
When the time is up remove the egg from the pan with a slotted spoon, retaining the water. Place the egg in a bowl of iced water to stop it cooking further.
Add the miso paste and soy sauce to the pan of water that you used for boiling the egg.
Mix and bring to a boil then add your noodles and cook as per instructions on the pack.
Slice the spring onions and chilli thinly.
Carefully peel the shell from the boiled eggs and cut in half lengthways.
When the timer for cooking your broccoli goes, remove it from the oven.
Assemble your ramen bowls by sharing the broccoli between two bowls. Then using tongs, remove the cooked noodles from the pan and add to the bowls.
Then pour your miso and soy broth into the bowls.
Finish your bowl by adding the spring onion and chilli slices, along with the jammy soft boiled eggs.
Grab a pair of chopsticks and dig in.
