Air Fryer Mushroom Quesadillas

These cheesy pockets of flavour are perfect for a quick lunch. If you’ve never had a creamy mushroom quesadilla you need to try these.

Ingredients

Method

  1. Add the garlic and herb oil to a frying pan on a medium heat. Add the sliced onions and mushrooms and saute for around 5 minutes until soft.

  2. Add the cream cheese to the pan and stir through, then take the pan off the heat.

  3. Take a tortilla and put a spoonful of the mushroom mixture on one half of the wrap. Add a sprinkling of mozzarella and some fresh coriander if you wish.

  4. Fold the tortilla in half to make a semi circle shape.

  5. Press the tortilla down with your hand then brush both sides of the quesadilla with cold pressed rapeseed oil.

  6. Place the quesadilla on a piece of baking parchment and add to the Air fryer and cook at 200C for 5 minutes, turning the quesadilla over half way through.

  7. Keep doing this until you have filled and cooked all 6 quesadillas.

Recipe Notes

If you don’t have an air fryer you can cook these in a hot pan instead. Just preheat the pan then cook the quesadilla for a couple of minutes on each side until golden brown.
