Homemade Garlic Mayo

Sure it’s easy to spoon mayo out of a jar but making your own is actually really easy too. Our recipe for Garlic & Herb Mayo beats anything you will find in your local takeaway and it can be ready in just a few minutes.

Method

  1. Whisk the egg yolk until thick and slightly paler in colour. This should take around 2 minutes if whisking by hand, or 30 seconds if using an electric whisk.

  2. Add in the Dijon mustard and whisk for a further minute by hand. Add the rapeseed oil, a drizzle at a time, whilst all the time whisking vigorously. Continue whisking and adding oil until the mayonnaise becomes thicker.

  3. Add a little of the white wine vinegar and whisk again until fully mixed.

  4. Once the mayonnaise is made spoon it into a container with a tight fitting lid and store in the fridge for up to 10 days
