Baked Dough Balls & Maida Vale Ale Washed Cheese
This is the ultimate sharing starter. What could be more delicious than dipping fresh dough balls into molten cheese.
Serves 4 or 5 as a starter or nibbles
Ingredients
For the baked cheese
180g wheel of Village Maid Maida Vale Ale washed Cheese
For the dough balls
200g Wessex Mill plain flour
200g wholemeal flour
350ml milk
1 tsp bicarbonate of soda
½ tsp salt
1 tsp sugar
1 tbsp littleseed Extra Virgin British Rapeseed Oil, plus more to brush
Method
Put all the ingredients for the dough balls into a large bowl and then bring together to form a dough.
Shape the dough into small round ball shapes and brush the surface of the dough balls with a little littleseed Rapeseed Oil. We made eight dough balls, each the size of a small handful.
Pop the wheel of Maida Vale cheese in the middle of a lightly floured baking tray, arrange the doughballs around the outside of the cheese and bake in a hot oven until the bottom of the dough balls sound hollow when you tap them. It should take around half an hour.
