Creamed Cheesy Leeks
Cheesy leeks make a great addition to any roast, including Christmas dinner.
Serves 6-8
Ingredients
2-3 medium sized leeks
60g Wessex Mill plain flour
500ml milk
Pinch of salt and pepper
2 tbsp double cream
150g grated mature cheddar cheese
Method
Prepare and chop the leeks. Place a frying pan on a medium hob heat, along with a good drizzle of littleseed Rapeseed Oil and cook the leeks for around five minutes.
In a saucepan, mix the oil and flour until combined, and over a medium heat cook the paste and stir occasionally. This should take a few minutes.
Gradually add the milk to the saucepan, stirring all the time until sauce is smooth and thickened.
Stir in the grated cheese, and then add the double cream until you’ve reached the consistency you like!
Add the soft, fried leeks to your cheesy, creamy sauce and season generously. Place in an oven proof dish, top with a handful of grated cheese and pop under the grill for a couple of minutes until melted.
